A Happy Deer

3141220334_2684d5fd25_bAfter the anti-bovidae prejudice that I encountered for my happy goat, I give you a happy deer in the spirit of the season.

I am hoping that the addition of the deer will encourage greater civility and fewer personal attacks on this site. I have a long line of happy animals to compel such anthropomorphic therapy.

    MOUSSE AU CHOCOLAT

    In top of a double boiler over hot water melt
    1/2 lb bittersweet chocolate
    3 Tablespoons water (I’ve used espresso…)
    1/4 cup sugar
    Mix well, remove and cool. Add one at a time
    4 egg yolks
    mixing well after each addition. Add
    1 inch scraped vanilla bean
    Fold in
    4 stiffly beaten eggs whites
    Spoon into individual pots. Refrigerate. To serve, dollop with
    1 cup heavy cream, whipped Serves 6-8

    The deer looks like it has achieved nirvana after years of deep meditation on food.

    BTW–my squirrels have begun the annual eating of the bird feeder as well as defeated my best attempts at suet “lockdown”!
